Honing stone, Steel, Electric sharpener, Grinding wheel – whats the best way to sharpen good Knives?
I have some decent kitchen knives I’d like to pass down to family – so I want them to be sharp and good forever. How do I get my best edge?
If you are new to knife sharpening then the best and easiest is sharpening system like Edge-Pro, Lansky or Spyderco Sharpmaker.
If you know or are willing how to use stones then they do give best results, especially for fine, high performance edges. There is no mechanical sharpening device that can give you 0.25 micron thick final edge(human hair is 50microns or so), have to do it by hand. It’s not required, but it’s fun
Let alone cutting ability of that edge.
Most of the electric sharpeners have fixed angle, which is quite thick at that. Also, all of them can damage the edge for high end knives. In theory there are new electric sharpeners that go easy on knives, but again, they also have fixed edge. You don’t want the same 40deg. edge on your bone cleaver and meat slicer.
I was asked to fix damaged edges from electric sharpeners a lot of times. Quite often it’s the user error, other times sharpener itself.
Steel in general is not a knife sharpener. The idea or the goal of steeling is to realign the rolled and rippled edge. And that has to be done before every use of the knife, because of the metal memory effect. That is deformed metal when left alone tends to go back to that deformed state, even if you align it.
Grooved steel that most of the knife manufacturers include with their knife sets should probably be banned, that does more damage to the knife than good. The best is smooth steel or ceramic rods.
Grinding wheel can be good or bad. It’s very easy with them to “burn” the edge. Same happens with many electric sharpeners. Heat treatment of the knife is a delicate thing, overheating the thin edge with high speed wheels results in pretty much loss of original heat treatment and thus loss of edge holding ability.
If you go that way, best is the whet grinder, or small belt grinder. I use belt grinder and works ok for cheaper pieces, but I’d never take my really good knives to that.
If you really want to keep those knives then keep them out of the electric sharpeners and grooved steels too. Learn how to sharpen yourself and be happy
it’s not that difficult to learn sharpening freehand and even easier with the sharpening system.
